the rook (also known as castle) is the only non-human piece in the game, making the most obvious choice to be the sentry (for the purpous of the chess set, I'd recommend the lv.1 sentry)
The king should definitely be the heavy, but I think that perhaps to have it make more sense, said heavy should be carrying the intelligence B-)
As for the bishop, I'd definitely recommend the spy, as the bishop moves diagonally while most other pieces move straight.
The knight should definitely be the soldier, as the knight in chess is the only piece capable of jumping over another piece using it's 'L'-shaped movement.
Queen is kinda iffy. If you're going for the heavy/medic idea, then yeah it should be a medic. However, it should also be noted that the queen is the most powerful unit in the game, and this should also be taken into consideration.
The pawn is the expendable, frontline soldier. This can either be the scout or the pyro, I'm not sure. I think that perhaps the red team could have pyros and the blue team scouts, as to include all classes (except the sniper, engineer, and demoman, but perhaps you could swap those with other pieces for red/blue)
I think the final board could be something like 1 heavy, medic per side. 2 sentries per side. red side has 8 pyros, blue side has 8 scouts. red side has 2 demomen, blue side has 2 soldiers. Red side has 2 snipers, blue side has 2 spys (arch rivals ). This setup would leave out only the engineer, who is inadvertedly represented by his sentries.
