sv_pure is only weapons?

There is sv_pure 1 and sv_pure 2
And I am pretty sure sv_pure also protects from wall mats.

Yes, but sv_pure also restricts use of weapon reskins, blood reskins, sound replacements, and everything else that makes the game not suck.
To configure it to only prevent wallhacks, it takes a good hour+ of configuring, along with a few more of testing.

How to catch a wallhacker:
Record a demo of them first person
Play back the demo with mat_wireframe 1

Demos in Garry's Mod is buggy as hell. But it works in TTT... Just that the HUD will be screwed up, like the "TRAITOR", "DETECTIVE" and "INNOCENT" text.

That doesn't matter if you're catching a hacker.
//And the classes are messed up because of the way TTT sets roles. None of the roles besides detective are actually broadcasted to the client until the end of the round, which is a VERY effective measure to prevent traitor hacking.
