I've always seen this in game settings.
Can someone please tell me what's the point of it.

v-sync makes sure that your frames dont go overboard or so ive read. like if you have too many frames you get screen cutting.
basically say the screen buffer is 70fps and your fps is 2mill, v-sync puts it down to 70 to avoid screen cutting.

or maybe it was something to do with the screen refresh rate...?

It synchronizes (from the word sync) your monitor hz's with your fps to avoid screen cutting by benchmarking your fps to the maximum 70hz = 70fps 100hz = 100fps. Of course if you want a ton of fps and don't care for the screen to cut up the graphics sometimes then don't worry about it. It's just there to increase performance. Or so I've read.
